Pesto Tofu w/ Confit Tomatoes over Quinoa
I apologize in advance for making you turn your oven on in August. But I have no doubt you’ll forgive me when you meet these velvety confit tomatoes. They freeze well, so I’m warning you that you’ll want to make more to bottle up and use over the fall and winter.
In this dish, we toss marinated tofu with pesto and serve it over quinoa along with confit tomatoes, roasted corn and dollops of ricotta. I feel like my picture did not do it justice - this dish brings out the best of late summer with several layers of flavor.
Pasta a la Panzanella
Have you tried Panzanella? It’s a summer wonder, begging to be served outdoors. Juicy tomatoes, crunchy vegetables, and stale sourdough croutons are soaked in an easy but addictive vinaigrette. Well, in this twist on a classic recipe, I give you pasta in place of the croutons and recommend using a high-protein pasta like Kaizen. It is still darned addictive and almost no-cook (just the pasta) weeknight dinner or beach picnic lunch.
Pro-tip - If you’ve made the Confit Tomatoes from the previous dish, use the deliciously flavored olive oil from the jar in this dressing. You’re welcome.
High-Protein Hummus w/ Greek-Style Veggies
Something about a simple Greek salad always takes me back to impossibly blue skies, sand and sea. We jazz it up here with artichokes and almonds, and serve it over a high-protein hummus. Because cottage cheese makes everything better, yes? (Dairy-free option - Tofu Ricotta and it’s very very very good).
This is an excellent no-cook meal to enjoy chilled. Stretch it to serve 4 by stuffing it inside a pita (maybe add some harissa and greens) or serve on Ezekiel toast.
