I have a weakness for lightly sweet things. Like these cookies. Buttery (but no butter) shortbread-style cookies with satisfying crumble. Want to dunk them in your coffee or tea? Go ahead, they won’t mind. In fact, they may insist on it.

Blanched almond flour (or any nut flour of your choice) makes the base. But what pushes them over the edge? I use a little Einkorn flour, which lends just enough of the (oh hey, I’m wheat but the gentle kind) flavor that you need in lower carb treats.

You can buy Einkorn all-purpose flour on the Jovial Foods website (get their pasta too) or at Whole Foods and many other grocers. If you can’t find it, you can also use regular all-purpose flour or whole wheat flour (but be warned I haven’t tried it).

For a gluten-free version, oat flour works very well. You can either powder gluten-free rolled oats in a blender or purchase packaged oat flour.
