What an enticing menu with beautiful recipes! Vasudha, for those who are watching blood glucose, is this menu a bit high in carbs?

I don't think the carbs are high at all, Faye. There's plenty of protein, fiber and good fats to keep things in balance. That being said, if you know that certain foods are spiking your blood sugar, it's good to be mindful!

I don't measure my blood sugar but in the menu I was wondering about the pasta in the soup, the longevity rice and the dried figs in the dessert.

Hi Faye! The soup has about 3 tablespoons cooked whole grain pasta per serving (about 6 carbs), and it's balanced by tons of fiber and protein from the veg and lentils. The forbidden rice is also a small portion balanced by the protein, fiber, and fats in the rest of the dish. The fig bars--those are a special treat, for sure.
