I came to the Vegetarian Reset Lab looking to eat more vegetarian meals. I was strictly vegetarian for a period in my early 20’s, but gave it up after after concluding that I just wasn’t engineered to subsist on a diet that seemed to be relatively (and unavoidably) low in protein and high in carbohydrates. As I approached middle age, this theory was only reinforced when I experienced weight gain that was remedied by switching to a low-carb diet. It was reinforced a second time two years ago when I started wearing a continuous glucose monitor.
