A low carb, high protein Paneer Paratha for Diwali
A staple in your Indian dinner rotation
These Paneer Parathas have become a staple in my weeknight routine. The base is primarily coconut flour, but I substitute a part of it with Einkorn flour (or other flours as listed) - which is just enough to make them taste ‘normal’. They are soft and flavorful even on their own, but I usually serve them with Greek yogurt and Indian pickle (achar) as pictured, or with a cup of dal.
