One Pot Quinoa, Paneer and Puy Lentil Biryani
Obsessed. This is everything you want biryani to be - decadent, moist and vibrant yet delicate flavors in your mouth. But - it is also a one-pot stovetop recipe, packs 25g protein per serving and uses up an entire pound of asparagus. Plus, the unsurprising side effect of leaving your kitchen (my entire apartment) smelling amazing.
Black Lentil Stew w/Coconut Flour Flatbread
Did I mention one-pot comfort? Yeah, this one makes good use of those black lentils you purchased in February (I don’t forget!) and turns them into soup because April is full of those gotcha 38F days. I’ve started to work with coconut flour recently and really love the texture of the coconut flour flatbread (Think ‘paratha’.)
Masala Tofu Scramble w/ Ezekiel Toast
Want an easy-peasy weeknight dinner on the table in 20 minutes? That looks like this? Slurp. This one works beautifully for breakfast as well, and the beta launch members of The Vegetarian Reset Lab are loving it!
A Taste Of Spring Salad
For those sunny days when you simply must have all things pretty and green. Green peas, mint, radish and greens work beautifully in this chopped salad with grated eggs or crumbled silken tofu. Topped off with generous dots of my Cheezy Avocado sauce.
Pasta Gratin w/ Spinach, Artichoke and Pistachio
A gluten-free Lemony Chickpea Bechamel binds together this gratin with a ‘spinach and artichoke dip’ vibe. A treat anytime of year but especially right now!
