Isn’t October the best? It’s cold enough to be soup season, still warm enough to coax me into believing it’s salad season, plus it’s my birthday month so I get to dive face down into the Prantl’s bakery burnt almond torte. Don’t forget tomatoes are still around!

Waldorf Salad (page 91) - Going apple or pear picking? Make this refreshing salad that tosses apples, celery and walnuts with a high-protein Greek yogurt mayo. Shaved parmesan lends umami and you can dot with raspberries (or cranberries which are in season) for color.
Loaded Cauliflower Soup (page 106) - a hug in a bowl, the color of sunshine. Zingy ginger and chile lace the edges of this hearty and comforting soup that’s loaded with nuts and lentils for extra protein and fiber. Add a slice of my Zucchini Bread (page 14) for a complete meal.
Sundal (page 95) - The Hindu festival of Navratri, celebrated in October, is not complete in South India without Sundal - an easy but flavorful stir-fry you can make with just about any bean or lentil. Add some sauteed greens and another protein like paneer or even peanuts, or serve over Greek yogurt for a complete meal.
