Vegan (and gluten-free) Bechamel Sauce (click here for recipe)
A simple creamy white sauce spells out comfort to me, whether in a mac n’ cheese, or simply to lighten up a tomato or pesto sauce. I am particularly excited about this vegan and gluten-free version that uses olive oil, chickpea flour and the plant-based milk of your preference (I used Oatly full fat milk here). Use it in your lasagna or vegan mac n cheese. Add nutritional yeast for a cheesy flavor and protein boost.
