INGREDIENTS | Makes 2 servings
4 eggs
1 tbsp olive oil
1 cup raw spinach
1/2 cup red peppers, chopped into strips
1/4 cup mozzarella, shredded
1/2 tsp dried oregano
salt and pepper, to taste
DIRECTIONS
Step 1 - Roast peppers in a pan on high heat for 2 minutes
Step 2 - Add spinach and cook on medium until it wilts
Step 3 - Break eggs into a bowl and add all other ingredients, whisk well
Step 4 - Pour eggs into pan, stirring continuously for about a minute
Step 5 - Turn off the stove while eggs are still a bit runny, they will continue to cook in the residual heat of the pan
