Roasted Pepper and Spinach Scramble

INGREDIENTS | Makes 2 servings

  • 4 eggs

  • 1 tbsp olive oil

  • 1 cup raw spinach

  • 1/2 cup red peppers, chopped into strips

  • 1/4 cup mozzarella, shredded

  • 1/2 tsp dried oregano

  • salt and pepper, to taste

DIRECTIONS

  • Step 1 - Roast peppers in a pan on high heat for 2 minutes

  • Step 2 - Add spinach and cook on medium until it wilts

  • Step 3 - Break eggs into a bowl and add all other ingredients, whisk well

  • Step 4 - Pour eggs into pan, stirring continuously for about a minute

  • Step 5 - Turn off the stove while eggs are still a bit runny, they will continue to cook in the residual heat of the pan

    Serve hot
