INGREDIENTS | Makes 2 servings
2 mini cucumbers
1 tbsp chopped parsley, for garnish
HUMMUS
1.5 cups cooked chickpeas, water saved (or one 15oz can, water saved)
2 tbsp chickpea water, more as needed
2 tbsp olive oil
1 clove garlic
1 tbsp white sesame seeds (10g)
1 tsp cumin
1/2 tsp black pepper
3 tbsp lemon juice
1/2 tsp salt, to taste
50g fire roasted peppers (or 1 bunch cilantro + 1 green chilli or 1 jalapeno deseeded per taste)
DIRECTIONS
Step 1 - Blend together all ingredients for hummus
Step 2 - Slice cucumbers in half lengthwise and carve out center
Step 3 - Fill each cucumber slice with 1 tbsp of hummus
Garnish with parsley and serve
