INGREDIENTS | Makes 4 servings
This recipe makes ~12 cucumber crackers and ~12 strawberry crackers. Each serving is 6 crackers, say 3 of each
CUCUMBER CRACKERS
1 baby cucumber
2 tbsp goat cheese (I used Boursin)
1 tbsp roasted red pepper diced
STRAWBERRY CRACKERS
2-3 strawberries
2 tbsp ricotta cheese
12 shelled pistachios, unsalted
DIRECTIONS
Step 1 - Slice the cucumbers and strawberries approximately 2mm thick
Step 2 - Pipe 1/2 tsp of goat cheese on each cucumber slice
Step 3 - Top with a diced roasted pepper
Step 4 - Pipe 1/2 tsp of ricotta on each strawberry slice
Step 5 - Top with a pistachio
