Chili Cheese Toast definitely makes it to the top 5 Indian street foods of all time. And on my Zucchini bread? Oh yes.

INGREDIENTS | Makes 2 servings

  • 4 slices Zucchini Bread

  • Chili Cheese Topping (recipe below)

  • 1 tbsp chopped cilantro (corriander), for garnish

  • 1 ½ tbsp spicy ketchup or Sriracha

  • Chili Cheese Topping:

    • ¼ cup shredded low moisture, part skim mozzarella

    • ¼ cup shredded cheddar cheese

    • 1 tsp grated ginger

    • 1 tsp minced garlic

    • 2 green chili(s) (sub jalapeno, thai chili or 1/2 serrano pepper), chopped (adjust to spice level)

    • ½ tsp ground cumin

    • ¼ tsp salt, to taste

DIRECTIONS

  • Step 1: Preheat oven to 400F/200C.

  • Step 2: Cut each slice of zucchini bread optionally into 2 pieces as shown in picture. Spray lightly with oil and toast in oven on a baking sheet for 3-4 mins on each side or until golden brown spots appear.

  • Step 3: Remove baking sheet from oven and preheat the broiler. Mix together all ingredients under Chilli Cheese Topping in a bowl.

  • Step 4: Spoon topping on to the toasted slices of bread. Broil 1-2 mins until cheese melts.

    [Alternatively, toast on stovetop until cheese melts]

    Garnish with cilantro, drizzle with ketchup and serve
