Inspired by the traditional Kaju Katli, you will love this fabulously purple and delicately sweet version, sweetened with just berries and nothing more!

INGREDIENTS | Makes 4 servings

  • 1 cup (100g) ripe strawberries, pureed

  • 1 cup (100g) ripe sweet blueberries, pureed

  • 1 tsp cornstarch + 1 tsp water, mixed together to make a slurry

  • 1 tsp lemon juice

  • 1/2 cup (56g) cashew, powdered

  • 2 oz (56g) paneer, crumbled

  • 1 tsp ghee

  • 2-3 sheets edible silver foil (optional)

DIRECTIONS

  • Step 1 - Mix and heat the berry purees, cornstarch slurry and lemon juice in a pan on medium, for 10-15 mins, stirring frequently, until reduced to half. Turn off stove

  • Step 2 - Mix in the powdered cashew and crumbled paneer with spatula. The mixture will leave the sides of the pan and become a sticky dough ball. Let cool for 5-10min

  • Step 3 - Grease hands with 1/2 tsp ghee and transfer dough to wax paper, place another sheet on top. Using a rolling pin, roll out to a square (ish) shape, approx 6".

  • Step 4 - Remove the parchment on top, brush with 1/2 tsp ghee and carefully place the edible silver foil on top (turning paper over and allowing to fall), covering as much as possible

  • Step 5 - Freeze for 30-60 mins to set. Slice into diamond shapes with a sharp knife

    Store frozen and thaw for 5-10 mins before serving
