Phew, we made it to 2022, you guys! I hope everyone managed to have a good holiday break despite the Omicron surge, which has been really unsettling. Impossible to know what’s next, so let’s do what’s in our control and nourish our bodies and our minds this year.

First in the series is Adai, which is a heartier version of Dosa and is made with a mixture of lentils and rice. Here we substitute quinoa for the rice, to get that whole grain goodness. It is often served with Avial, a melange of veggies in a simple but flavorful coconut-chili yogurt sauce. Use any vegetables of your choice, including red pumpkin and drumstick. This makes a filling meal, chockful of protein, fiber, healthy fats and complex carbs!
Substitute your favorite plant-based yogurt for the Greek yogurt to make this recipe vegan.

So technically, peanut masala is bar food - "pub" food, rather :) - in Bangalore (where I grew up)! But it's also a high-protein, satiating and vegan snack that's perfect to warm you up in the winter. So enjoy this air-fryer/oven version at home, it's just what the doctor ordered to cheer you up during the long evenings of January!
