I had a different recipe teed up as this month’s bonus for Weeknight Simple subscribers, but as NYC is experiencing another heatwave (amongst worse things), I decided to switch it up with this refreshing yet balanced smoothie.

Is it breakfast? Is it dinner on a hot, airless evening in August when the stove is not an option? Maybe it’s both. The peaches bring that late-summer lushness, while the protein and fiber fill you up and creamy cashew butter adds that rich mouthfeel. This is not a sugar bomb masquerading as wellness. It’s the kind of meal that makes you feel like you did something good for yourself, without trying too hard.
