A Valentine's Day Waffle with 14g protein per serving
Naturally sweetened, dairy-free and no protein powder
As I was tinkering with an old mug-cake recipe, I decided to try putting the batter in my heart-shaped Dash waffle maker (fellow parents know the drill – once you have a little girl, your home somehow transforms into a parade of hearts, unicorns, and rainbows).
The result? Perfectly sweet waffles that don't even need a drizzle of syrup. Better yet, they're the ideal rescue mission for that lonely overripe banana sitting on your counter. You know the one – usually destined for the compost bin under my strict fruit management policy. Add beet powder, which in addition to doing all the powerhouse things that beets do, also turns them pink, and bingo, you've got your Valentine's Day breakfast.
One serving of these waffles has ~14 grams of protein. Want to make them even more satisfying? Pair them with 2/3 cup of Greek yogurt for a protein-powered breakfast that'll keep you going strong until lunch.
Peanut Butter Waffles
Serves 2: Makes 8 small waffles or 2 Belgian waffles
Ingredients
1 ripe banana
2 eggs
1/4 cup (64g) natural peanut butter (or nut/seed butter of choice)
2 Tbsp beet powder (for color)
1/2 tsp vanilla extract, optional
Fresh berries to serve
Directions
Combine all ingredients in the bowl of a small blender and blend until smooth.
Make waffles using your waffle maker!
