This little community has grown so much over the past few months, I figured I would introduce myself again! I'm Vasudha, so nice to meet all the new faces here (and the old ones!).
I founded v8well to make healthy vegetarian cooking interesting and fun. Too often, as vegetarians, our diets become overloaded with white carbs in the form of bread, rice and noodles and other processed foods. Vegetables take a back seat. We are just beginning to understand the impact of these foods on our blood sugar, gut health and deep links to several chronic diseases and it doesn't look good!
Here, you will find moderately low-carb recipes and naturally sweetened desserts using whole foods, usually gluten-free, often vegan and inspired heavily by traditional cuisines of the world.
I have been busy writing a cookbook that will be published next year and so have been posting a little less frequently here. I have tons of delicious recipes coming up though and hope you enjoy them!
